This role is responsible for menu design, staff leadership, cost control, and maintaining the highest culinary standards. Working in collaboration with the Executive Chef, the Chef de Cuisine is entrusted with crafting inspiring, seasonal dishes and delivering extraordinary guest experiences.<\/p>\n<p>We proudly welcome international culinary talent and are open to sponsorship for qualified candidates under the TN Visa program.<\/p>\n<p>Key Responsibilities<\/p>\n<p>Culinary Leadership &amp; Kitchen Management<br \/>\nOversee and manage all day-to-day operations of the kitchen, ensuring consistency and excellence in food quality.<br \/>\nLead, mentor, and develop the kitchen team, fostering a positive and professional environment.<br \/>\nAct as the head of the kitchen in the absence of the Executive Chef, maintaining full accountability for all kitchen functions.<br \/>\nCollaborate closely with the Executive Chef on strategic planning, menu engineering, and innovation.<\/p>\n<p>Food Quality &amp; Execution<\/p>\n<p>Ensure that all food is prepared and presented in accordance with the highest culinary standards.<br \/>\nDevelop and execute creative, seasonal, and sustainable menu offerings that reflect Alila\u2019s identity and local ingredients.<br \/>\nMaintain a disciplined and organized kitchen workflow that supports timely, high-quality service.<\/p>\n<p>Inventory &amp; Cost Management<\/p>\n<p>Monitor inventory levels and manage procurement of ingredients and supplies.<br \/>\nOversee cost control measures including waste reduction, portion control, and effective product utilization.<br \/>\nEnsure accurate record keeping of inventory, invoices, and kitchen expenditures.<\/p>\n<p>Staffing &amp; Training<\/p>\n<p>Lead recruitment, onboarding, scheduling, and ongoing training of culinary staff.<br \/>\nCoach team members to support professional development and uphold kitchen standards.<br \/>\nFoster an inclusive environment that supports colleague growth, accountability, and creativity.<\/p>\n<p>Health, Safety &amp; Sanitation<\/p>\n<p>Enforce compliance with all health, safety, and sanitation regulations and practices.<br \/>\nConduct regular kitchen audits and inspections.<br \/>\nEnsure all equipment is maintained and operated safely and efficiently.<\/p>\n<p>Physical Requirements<\/p>\n<p>Must be able to stand or walk for extended periods, often up to 10\u201312 hours per shift.<br \/>\nMust be able to work in high-temperature environments such as over stoves, ovens, grills, and dishwashers.<br \/>\nMust be able to lift, push, pull, or carry items weighing up to 50 pounds or more (e.g., large pots, boxes of ingredients).<br \/>\nFrequent bending, reaching, twisting, and handling of sharp kitchen tools.<br \/>\nAbility to perform job duties in a fast-paced, physically demanding environment.<br \/>\nMust be able to work evenings, weekends, and holidays as scheduled or needed.<\/p>\n<p>Key Attributes<\/p>\n<p>Exceptional culinary creativity and a deep passion for food.<br \/>\nStrategic thinker with strong attention to detail and execution.<br \/>\nNatural leader and team builder with excellent communication skills.<br \/>\nAbility to remain calm and focused under pressure.<\/p>\n<p>Salary Range<\/p>\n<p>$70,600 \u2013 $106,000 annually. This is the pay range for this position that Alila Ventana Big Sur reasonably expects to pay.
